Pumpkin is the epitome of a cold weather treat. Whether it’s the first sign of autumn or well into winter, you can find these beautiful orange bulbs at the market. Their earthy, hearty and sweet flavor is like a warm and cozy blanket in the kitchen. Thanks to organic canned variaties you can truly enjoy these health food any time of year.

Pumpkin is high in fiber, Vitamin A, potassium and the antioxidant beta-carotene.

I love pumpkin in baked foods and adding organic pumpkin puree really steps up the health of any dish. The creaminess really compliments breads, muffins and granolas. Today I wanted to upgrade my granola recipe with the delicious flavors of fall in a clean pumpkin pie granola recipe that’s been cleaned up for you!

This perfectly sweet, crunchy and pumpkin flavored granola is great with almond milk for breakfast, tossed over a salad or as a delicious snack on its own. Toss with some 70% cacao dark chocolate chips and you’ve got yourself a delicious dessert granola – yum. I love to pack in single-serving bags for a great on-the-go snack.

Note: I didn’t have any pepitas on hand but you could of course add them for extra pumpkin-y goodness. Enjoy!
